Grilling Basics – with Charcoal and Wood

Though different types of grills, charcoal and wood grills are sometimes combined together because, when done properly, they can create the same cooking effects and intensity of flavor. Charcoal is basically a store purchased, ready to light and start cooking product. Whereas wood, on the other hand, needs to be burned and reduced to coals BEFORE it can be used for cooking food. This is because wood needs to be burned down first to eliminate resins and impurities that can taint the food, causing it to become bitter and less than palatable. Given these differences, charcoal and wood still function in the same manner, and as such, both will be referred to as charcoal hereafter.
