  Open or Closed Lid Cooking

When grilling, it is recommended that you use the grill with the lid in the up position. This is because cooking with the grill lid down has the tendency to smother the fire, creating soot that can contaminate the meat. Of course, the lid is always useful for putting out the fire whenever flame-ups occur from dripping fats and other juices.
